WINNER OF THE 2007 NSOCC PIE BAKING CONTEST
½ cup cold butter, cut into chunks
¼ cup sugar
½ tsp vanilla
1 ¼ cup flour
In food processor, combine & pulse till crumbly.
Press onto bottom and sides of ungreased 9" pie plate.
(Use as much of mixture as you like so crust won’t be
too thick OR use all of it.). Bake 350° for 5 (five) minutes. Cool completely.
CREAM CHEESE LAYER:
6 ounces cream cheese (room temp)
¼ cup sugar
1 egg
1 tsp vanilla
Beat well in small bowl of electric mixer. Pour over
cooled crust.
APPLE LAYER:
1 ½ (Granny Smith) apples, peeled & chopped
1 ½ (Granny Smith) apples, peeled & thinly slices
2 TBL apple juice
2 TBL brown sugar
2 TBL (white) sugar
1 TBL. lemon juice
1 tsp cinnamon
Mix & spoon over cream cheese layer. Bake pie for
45 minutes.
CRUMB TOPPING:
½ cup rolled oats
1/3 cup flour
1/3 cup brown sugar
1 tsp cinnamon
¼ tsp nutmeg
¼ cup cold butter
While pie is baking, combine in food processor and pulse
till resembles coarse crumbs. Sprinkle over hot pie and bake for 15-20
minutes more. Cool completely before serving. Store unused pie in refrigerator,
but let it sit out to warm up a bit before serving.
